Chigop is a Henderson dinner restaurant with an unusually focused take on Korean grill food. Its name is closely associated with gopchang, and the menu gives beef and pork intestines the same prominence that many barbecue restaurants reserve for short rib or pork belly. Individual portions sit beside larger plates, making the experience accessible to curious solo diners as well as groups sharing several cuts.
The grill section is the clearest expression of that speciality. Pork makchang comes with onion, potato, mushroom and rice cakes, while beef small and large intestines offer different textures. An assorted gopchang platter brings intestines and tripe together for two or three people. Pork belly and thinly sliced beef brisket provide more familiar alternatives, the latter grilled with onions, bean sprouts and spring onion.
Heat and broth are equally important. Spicy plates feature pork or beef intestines, including a mixed beef-and-pork version, while squid, pork belly and bean sprouts form another shareable combination. The soup list moves from budae jjigae and kimchi stew to soybean-paste stew, pork-broth gukbap and a bubbling beef-tripe hotpot, giving colder evenings several substantial choices.
Diners who do not want offal can turn to Korean fried chicken in crisp, soy-glazed, seasoned or honey-glazed styles. That contrast makes it possible for a mixed table to explore the restaurant's gopchang identity without every guest ordering the same thing. Chigop is best approached as a communal meal: a grill plate or hotpot in the centre, chicken alongside, and several textures shared across the table.
