Dumpling House – CBD Express brings a family dumpling tradition into central Hamilton, with owner Lei Wang drawing on the skills of generations of dumpling makers. That background shapes a restaurant centred on food prepared for sharing rather than a broad, anonymous takeaway menu. Daily service from late morning into the evening makes the Bryce Street dining room useful for lunch, a casual dinner or a table filled with several small plates.
Handmade dumplings remain the clearest expression of the kitchen. Steamed parcels combine pork and prawn with vegetables or noodles and spicy garlic sauce, while pork and cabbage dumplings arrive in a warming hot soup. The pan-fried version adds a crisp base and is paired with the family's garlic-soy dipping sauce. Choosing across those preparations lets diners compare texture as much as filling, from soft wrappers and broth to the caramelised edge of the fried pan.
The street-food section gives the meal a different rhythm. A Chinese burger and pan-fried pork buns provide the more substantial bites, while spring-onion pancakes, spicy wontons and cold spicy chicken are suited to the middle of the table. Wonton soup offers a gentler counterpoint. That variety supports a gradual shared meal, beginning with a few snacks before moving to dumplings or a larger bowl.
Beyond dumplings, the menu stretches into ramen, rice and noodle dishes without losing its Chinese focus. Dandan miso ramen brings together sesame broth, peanuts and peppercorn oil, while braised lamb ribs, pork belly, beef, garlic-prawn coconut curry and tofu appear over rice. Sizzling noodles and noodle soups add further choices, and tofu versions across bowls, rice dishes and noodles give vegetarian diners several complete options rather than a single substitute.
