Kurētā is concealed within JW Marriott Auckland, where a discreet entrance leads to an intimate room built around two shared teppan tables. With only 30 seats, the arrangement keeps the cooking close without turning dinner into a conventional teppanyaki show. The restaurant takes its name from the Japanese word for crater, linking the volcanic landscapes of Japan and New Zealand. Charred textures, stone and metal carry that elemental theme through the space, while fire and heat become part of a calm, carefully paced omakase experience.
Chef Aki brings a long Japanese foundation to the counter. He began cooking in Tokyo at 18 and spent 13 years in Japanese fine dining before broadening his repertoire through Italian, French and Mediterranean kitchens after moving to New Zealand. At Kurētā, that experience shows in a style that values restraint as much as technique. Dashi is prepared daily from Japanese kombu, bonito and a closely held blend of fish flakes, giving dishes a quiet savoury backbone before the more immediate aromas of the teppan come into play.
The current progression moves between local seafood, Japanese preparations and ingredients cooked directly over heat. An oyster with miso and carrot may lead into sashimi seasoned with shio-koji, followed by chawanmushi enriched with pāua cream. Wagyu appears in oden with daikon and porcini, then again in a thin yaki-shabu course with sweet soy, kina and caviar. Hibachi-grilled black tiger prawn, aged beef with yuzu kosho and a charred rice ball take the sequence towards its savoury finish before warm matcha affogato closes the meal.
Diners choose among Signature, Elemental and Immersive experiences rather than assembling an à la carte order. The longer versions add ingredients such as New Zealand deep-sea scampi, Japanese bluefin tuna and premium aged wagyu, but each follows the same deliberate journey from delicate raw flavours to richer grilled courses. Sake and wine matches are available for guests who want the drinks paced alongside the food. The small capacity, communal counter format and direct view of the chefs make Kurētā particularly well suited to an occasion where the unfolding sequence is the evening’s focus.
