Parro approaches Mediterranean cooking through the lens of a small Dominion Road neighbourhood restaurant. Charcoal is central, not merely as a finishing flourish but as a way to shape bread, vegetables, seafood and meat across the menu. Local products and the rhythm of the seasons keep that framework connected to Auckland rather than turning it into an imitation of one particular European region. The concise list also encourages a table to order across sections, beginning with a few modest plates before deciding whether to continue into pasta, grilled fish, lamb or steak.

The opening choices show how carefully smoke and richness are balanced. House flatbread is given a long fermentation before it meets the charcoal, making it a natural partner for burrata with prosciutto and sherry reduction. Mushroom croquetas add black truffle, burnt onion and sour cream, while barbecued eggplant is sharpened by romesco and sesame. Even the baby cos carries several layers through salsa verde, ranch dressing and crisp pangrattato. These dishes are familiar enough to share easily, but each contains a detail that moves it beyond a standard antipasti spread.

Smaller seafood and vegetable plates keep the meal moving between cool, bright flavours and direct heat. Cured raw fish is paired with white gazpacho, citrus and orange-scented brown butter; tiger prawns arrive in an intense gambas pil pil sauce with chilli oil. Charred savoy cabbage uses smoked parmesan, caraway and brown butter to give a vegetable the weight of a main event. Larger courses include a changing pasta, courgette risotto and charcoal-grilled fish with fennel and potato gratin, while lamb shoulder combines chermoula, carrot, labneh and pistachio.

The grill also handles prime T-bone for diners who want to make meat the centre of the table. Dessert stays within the restaurant’s Mediterranean vocabulary but avoids repetition: tiramisu is the direct classic, dark chocolate crémeux comes with barbecued brioche and brown-butter ice cream, and a crema catalana foam is set against toffee, honeycomb and orange jelly. Because Parro is deliberately small and the menu is compact, it works best as a shared progression in which one or two dishes from each section create a varied meal without losing the restaurant’s clear charcoal-driven identity.
