Sabroso is a small downtown Rotorua restaurant with a broad Latin American outlook and an intimate, unhurried character. Since 2007, its kitchen has looked to the home cooking of the Caribbean, Central America and South America rather than narrowing the experience to a single country. The room on Haupapa Street is deliberately casual and cosy, making the restaurant as suitable for a relaxed dinner for two as it is for a table eager to compare dishes from across the region.
The opening plates show how much of the flavour is built in house. Tres Amigos brings together tomato salsa, Venezuelan guasacaca and warm queso with corn chips, while crisp beef taquitos layer caramelised onion with salsa, cheese and pickled jalapeño. Fish escabeche supplies a sharper counterpoint through sherry vinegar, capers, olives and roasted peppers, and tequeñitos wrap farmer's cheese in fried pastry before meeting more of that herbaceous guasacaca. Sabroso also makes its own sauces and spice blends, so the condiments are part of the restaurant's identity rather than an afterthought.
Main dishes move between slow cooking, crisp textures and generous sweet-savoury contrasts. Cuban ropa vieja combines shredded beef with tomato, olives and roasted peppers, served with Venezuelan cornmeal and plantain crisps. Chicken chimichanga provides the indulgent, crunchy side of the menu, while sweet-potato cakes may be topped with Ecuadorian-inspired beer-braised pork, pineapple slaw and jalapeños. A Jamaican-style jackfruit version gives the same format a meat-free route without reducing it to a token substitute.
Drinks stay compact and closely tied to the food. Margaritas and mojitos lead the cocktail list, seasonal sangria suits a shared table, and wines such as Carménère, Malbec and Torrontés keep the South American thread running through the meal. That focused selection works especially well with the restaurant's bright pickles, chillies and rich braises. Bookings are sensible for this small dining room, particularly when evening service is busy and takeaway may be paused during peak periods.
