Keystone sits on Victoria Street in central Hamilton, operating as both a bar and a restaurant rather than treating food as an afterthought. Weekday lunch offers a compact way to stop in during the day, dinner expands the choice, and Saturday brings a bottomless-brunch format. Its programme of recurring food offers makes different parts of the menu easy to explore across the week. The result is a venue that can shift from a midday catch-up to a longer evening without asking diners to leave the relaxed bar setting behind.

The sharing plates pull flavours from several directions. Corn ribs are seasoned with taco spice, lime and chipotle aioli, while buttermilk fried chicken is coated in a sticky chilli and tamarind caramel. Brisket-loaded fries, turmeric-battered popcorn cauliflower and garlic-parmesan pizza bread cover the hearty end of the table. Salt-and-pepper squid is paired with chipotle honey, butternut hummus and smoked paprika, giving a familiar bar snack a more layered sweet, smoky and spicy profile. Several snacks also carry clear vegetarian or vegan option markers.

Lunch and dinner mains are deliberately wide-ranging. Chicken pad Thai, nduja mac and cheese and hand-stretched noodles with cumin lamb sit beside crispy pork belly salad and 12-hour beef brisket over smoked potato mash. Chicken parmigiana and Panang curry supply two contrasting forms of comfort, while smoked Gouda and truffle risotto provides a meat-free option. Larger plates add beer-battered fish, sirloin with miso-roasted mushrooms and slow-cooked North African spiced lamb, whose couscous, dried fruit, feta, pomegranate and romesco build a notably different flavour profile from the pub classics.

Keystone's burgers and pizzas keep the same generous, full-flavoured approach. Fried chicken can come with hot honey or bacon and barbecue sauce, while the double smash burger layers two beef patties with bacon, American cheese and pickles. The hand-stretched pizzas include caprese, nduja and sausage, prosciutto with rocket, and lamb with roasted peppers and labneh; gluten-free bases are available. Warm skillet cookie, banoffee crème brûlée, fruit crumble and mango sorbet give the dessert list enough breadth and substance to finish a full dinner rather than merely accompany a drink.
