Vault 21 places contemporary fusion dining in the middle of Dunedin's Octagon, then changes personality once restaurant hours finish and club DJs take over. Before that late-night transition, the kitchen is built for sharing: small plates lead toward full-sized dishes, with selected New Zealand suppliers woven through the menu. Dedicated function rooms add another way to use the venue. It can therefore move from a table of exploratory food to cocktails, an organised celebration or a night out without abandoning its central restaurant identity.
The small plates cross several culinary traditions in quick succession. Prawn dumplings come with chilli-lime dressing, Korean fried chicken with sriracha mayonnaise, and Peking duck tacos with slaw, cucumber and hoisin. Apple-smoked lamb bruschetta brings burrata and chimichurri, while bacon-wrapped scallops sit on cauliflower purée. Pierogi filled with potato and cottage cheese, pork-belly steamed buns, wagyu sliders, sticky beef-brisket wontons and pāua fritters give a group many contrasting textures to pass around the table and compare together.
Large plates keep the Asian accents while giving each diner a complete meal. Bang bang chicken combines fried chicken, rice, vegetables, pickles and chilli jam; satay beef arrives with rice noodles, bok choy and peanuts. A soy-braised mushroom hot pot provides a plant-based centrepiece. Fresh Southern Ocean fish is matched with clams and a ginger-lime dressing, while pork-and-prawn risotto, soy-glazed charred steak and an overnight-braised lamb shank with kūmara show the kitchen moving confidently between seafood and richer meats.
Dessert preserves the menu's fondness for unexpected savoury-sweet combinations. Sticky date pudding gains chilli caramel and sesame brittle, a warm white-chocolate cookie skillet uses miso caramel, and coconut panna cotta comes with blueberry compote and toasted coconut. The bar is comparably wide, moving through original and classic cocktails, mocktails, bottled beer, bubbles and a substantial international wine list. This makes it possible to end dinner quietly with pudding and wine, or let the meal open into the more energetic late-night half of Vault 21.
