Chicken Union is a compact, chicken-focused restaurant on The Square that opened in March 2024. It trades daily from late morning into the evening and supports both pickup and delivery, giving the central Palmerston North location the easy rhythm of a casual dine-in and takeaway spot. The concept brings several fried-chicken traditions into one menu rather than committing to a single national style. American crispness, Korean sauces, teriyaki, Cajun spice and sweet-and-sour flavours all appear, tied together by a choice of bowls, sharing boxes and loaded fries.
Boneless chicken is the core format, served in generous boxes that can be shared or treated as a full meal. The American version keeps the coating crisp and comparatively simple, while teriyaki brings a sweet savoury glaze and Korean Spicy adds sticky heat. Cajun seasoning supplies smoke and spice, Crycry pushes the chilli further, and cheese powder gives another Korean-inspired finish. The house Union chicken uses its own sauce, while crisp-butter and sweet-and-sour options provide milder contrasts. Because the same chicken takes on several coatings, groups can compare flavours without ordering entirely different kinds of food.
Union Bowls turn the fried chicken into a more complete lunch, combining pieces with rice and slaw in regular or larger portions. The Chix & Fries section is deliberately indulgent: Saucy mixes teriyaki, mayonnaise and Union sauce, Spicy brings the Korean hot sauce, and Messy covers chicken and fries with creamy white beef ragù. Burgers offer a handheld route, including house and Korean-style versions, while online ordering makes combinations easy to assemble for several people. This is food designed to travel well, but bowls and plated boxes also give dine-in visitors a clear, substantial meal.
Sides are chosen to either reinforce the richness or cut through it. Plain fries come with garlic aioli, cheese fries carry Korean cheese powder, and Messy Fries repeat the beef-ragù topping without the chicken. Takoyaki adds crisp octopus-filled bites, while kimchi, rice and coleslaw can rebalance a heavily sauced order. Soft drinks keep the beverage selection simple and casual. The strongest way to use the menu is to mix heat levels and textures across the table: one clean fried style, one sticky sauce, something spicy, then cool slaw or rice between bites.
