Palato is the Browns Bay restaurant created by Alicia and chef Warren after their Palato Pasta venture began in 2021. Warren brings more than 18 years in professional kitchens, including fine-dining experience in San Francisco and Seattle, while Alicia leads the dining room and develops the desserts. Their compact restaurant in The Victor opened in 2023 and retains the personal feel of a business shaped by the pair themselves.
Fresh pasta anchors the menu, but the kitchen is comfortable reaching beyond a single regional Italian playbook. Global flavours and local seasonal produce meet in starters such as house focaccia with ricotta, crab-and-prawn arancini, halloumi, beetroot and a crisp cos salad. That approach gives the opening plates enough character to share while setting up the handmade pasta rather than distracting from it.
The pasta section moves confidently between deep, familiar sauces and less expected accents. Radiatore holds a classic bolognese, campanelle is paired with pancetta, pecorino and mushroom, and broad mafaldine carries slow-cooked lamb ragu. Other combinations bring together prawn and nduja, or butternut with brown butter and guajillo chilli, preserving the comfort of pasta while allowing smoky, spicy and seasonal notes to lead.
Dessert is treated as part of the restaurant's identity rather than a token finale. Ricotta cheesecake comes with passionfruit and matcha, coconut panna cotta with mango, and Mexican chocolate tart with horchata. A concise wine list and an intimate evening service suit a considered dinner, while reservations and advance conversations about dietary needs help the small team shape the experience around each table.
