Siam Thai Fusion Cuisine has been part of central New Plymouth since 2014, reshaping Thai flavours around a contemporary Taranaki dining room. The restaurant serves lunch and dinner from Tuesday through Sunday and is fully licensed, so it can accommodate anything from a quick midday dish to a longer evening meal. Its idea of fusion is grounded in Thai aromatics rather than novelty alone: lemongrass, galangal, kaffir lime, chilli, coconut and herbs recur across plates that use both familiar and unexpected formats.

The opening section shows that approach clearly. New Zealand mussels are steamed with red curry paste and coconut cream, while larb-spiced pork and potato are formed into crisp croquettes. Salmon tartare combines sweet chilli, lemongrass, kaffir lime, vegetables and rice-paper chips. Tom yum delivers a hot-and-sour broth fragrant with galangal and herbs, whereas tom kha softens those aromatics with coconut. Tofu satay, prawn spring rolls and fresh rice rolls give the table several more ways to begin and share.

Curries cover massaman, choo chee, green and yellow styles, with coconut cream, vegetables, potatoes, cashews and kaffir leaves creating different balances of richness and heat. Noodles and rice are equally important: phad Thai arrives wrapped in an egg net, and tom-yum fried rice carries prawns, mushrooms, broccoli and tomato. The wok section ranges from cashew chicken and ginger stir-fry to pad cha seafood with scallops, squid, mussels, prawns, green peppercorns and aromatic krachai.

The menu is broad enough to move well beyond curry and noodles. Diners can order grilled sweet-chilli salmon, a build-your-own Peking duck plate, pork spare ribs or a satay roti wrap, with vegetarian alternatives available for several preparations. Black-pepper soft-shell crab offers another seafood direction, while sticky rice with mango, coconut dressing and crisp mung beans provides a recognisably Thai finish. That mixture of grilled, fried, soupy and wok-cooked dishes gives a group plenty of contrasting textures to share.
