Salt Restaurant occupies the first floor of Millennium Hotel New Plymouth Waterfront, with sea views from the dining room and a broad balcony for fine weather. A lounge area gives diners somewhere to begin with coffee or a drink before moving to a table. The restaurant serves breakfast, lunch and dinner every day, so its personality changes with the light: mornings are relaxed and practical, lunch looks across the water, and dinner turns the coastal setting into the backdrop for a more composed meal.
Breakfast balances familiar hotel classics with a few distinctive choices. Turkish poached shakshuka and house-made granola sit beside eggs Benedict, a full breakfast and a pancake stack with mixed berry compote. Waffles carry herb butter, bacon, rosti, egg and spiced maple syrup, giving the section a savoury-sweet direction. Juices, teas and barista coffee round out the morning offering, making Salt equally useful for a complete breakfast or a slower drink and lighter plate while looking over the waterfront.
Lunch keeps the choice varied without becoming unwieldy. Fried calamari with sriracha mayonnaise and a baked beetroot cutlet cover crisp seafood and vegetable-led beginnings, while fish and chips, steak and fries, miso tofu and market fish offer distinct main-course styles. Nut-crusted salmon and a changing curry add further range. The result is a menu that can handle a quick midday meal, a business lunch or a leisurely table, with desserts such as white chocolate parfait and piña colada brûlée available afterwards.
Dinner becomes more ambitious, moving from coastal starters into crab fettuccine, pan-seared fish, pork loin, Afghani-spiced chicken, lamb curry, beef and miso tofu. The signature Lamb a Toru draws on the Three Sisters rock formation through three lamb preparations: rump, shoulder croquette and loin. Desserts continue the restaurant’s regional and coastal references, including sea buckthorn cheesecake, Taranaki sorbet and bread-and-butter pudding with kawakawa and mānuka honey. It is a menu designed to justify lingering over both the cooking and the view.
