Paris Butter has evolved from its bistro origins into a focused expression of contemporary New Zealand dining. Head chef and co-owner Zennon Wijlens leads the Herne Bay kitchen alongside chef and co-owner Nick Honeyman, drawing ideas from memory and travel while keeping local produce at the centre. The experience is built around an Evolution menu of six or eight courses, allowing season, texture and flavour to determine the route rather than a fixed catalogue of signature dishes. Its refined approach is balanced by a playful streak that keeps the meal from feeling ceremonious for its own sake.
The current sequence begins with snacks and bread before moving through combinations that are concise on the page but layered on the plate. Tuna is matched with butternut, yolk and radish; crayfish brings together yuzu, chardonnay and capsicum. Lamb then appears with pine nut, apple and caviar, a combination that places richness against fruit and saline accents. Each course develops its own idea rather than repeating one house formula, so the progression shifts naturally between brightness, savoury depth and more concentrated flavours.
Later courses show the kitchen’s willingness to build a dish around a strong central identity. The aptly named Duck Tray treats the bird as its own chapter, while beef is supported by asparagus, ponzu and mustard. Dessert avoids a sudden turn into uncomplicated sweetness: blood orange is paired with vanilla, koji and whey, followed by pear with saffron, olive oil and praline. These combinations make the tasting format feel cumulative, with ingredients and techniques echoing across the menu without forcing diners to decode a concept before they can enjoy it.
Wine and cocktails are treated as part of the restaurant’s creative work. Beverage director Joe Costello oversees a selection that moves between internationally recognised bottles and seasonal house drinks chosen to support the food’s changing profile. Paris Butter can also host private events, including meals in a dedicated room with a built-in cellar. Several dietary requirements can be accommodated with advance notice, an important consideration for a fixed progression. Together, the tailored drinks, intimate scale and carefully paced courses make this a destination for diners who want an evening organised around the full experience rather than a single dish.
