Pot Sticker Dumpling Bar calls its Lichfield Street venue Dumpling HQ, a clue to the playful focus of this Christchurch operation. The Poplar Lane dining room is the later-running counterpart to its Colombo Street branch, opening from lunch into the evening from Wednesday to Sunday. Everything revolves around a direct, sociable way of eating: baskets and plates arrive ready to share while the kitchen remains part of the experience.
The core dumpling list gives pork, chicken, beef and vegan fillings their own distinct treatments. Porkie Coriander and Like a Pig in Chive make their flavours plain in the name, Spring Ginger Piglet adds a brighter aromatic note, and Chick'n'Cori shifts the same fresh herb idea to chicken. Diners who want variety can order a mixed dozen, while Vego Dump provides a dedicated plant-based option.
Dim sum and bao expand the meal in several directions. Xiao long bao, emerald prawn har gow, pork and prawn shumai and spicy wontons sit beside bao filled with pork belly, fried tofu, Beijing duck or fried chicken. Asian greens, cucumber salad and fried tofu salad add freshness between richer bites, and dark chocolate dumplings made with Whittaker's chocolate turn the house format into dessert.
The venue is also arranged for private dumpling parties, with a separate dining area, views of the kitchen and drinks built into the occasion. Custom cocktails and chilled beer match the informal style, and ordinary table reservations are available for smaller groups. That mix of focused food, visible kitchen action and late-day service gives Dumpling HQ a stronger night-out character than a simple takeaway stop.
