Visions on Campus Restaurant is Ara's public training restaurant at the City campus on Madras Street. Cookery, hospitality and hospitality-management students prepare food, run the dining room and operate the licensed bar as part of assessed study, with professional staff closely supervising service. The result is a real restaurant experience with a changing academic rhythm: bookings are essential, and scheduled lunch and dinner dates follow the teaching calendar rather than ordinary weekly opening hours.
The current dinner menu gives students room to practise detailed contemporary plating. Rooftop-honey glazed Whitestone halloumi comes with roasted carrots, wild rice and romesco, while prawn-and-bacon risotto adds peppers, rocket and crème fraîche. Chicken consommé is paired with mushroom tortellini and Madeira foam. A vegan roasted-eggplant plate layers baharat, baba ganoush, coconut labneh, pomegranate and pistachio, giving plant-based diners a composed option with the same technical ambition as the other starters.
Main courses move across several techniques and proteins. Slow-cooked beef osso buco is matched with mushrooms, an Agria potato galette and bone-marrow gremolata crumb; Akaroa salmon brings smoked tomato, corn and jalapeño flavours. Chicken ballotine uses cranberry and quinoa stuffing with a maple-peanut glaze, while ras el hanout lamb combines grilled loin, lamb-shank pastilla and cinnamon jus. Salt-baked beetroot with panisse and spiced chickpeas provides a fully vegan centrepiece.
Dessert keeps the training focus visible through contrasting textures: a dark chocolate mousse can be prepared vegan and arrives with coconut sorbet, citrus and Brazil-nut crumble, while salted-caramel Bavarian cream is paired with ginger sponge, pear and walnut. The 2026 calendar also schedules French, Italian, international and dessert-focused evenings. Together with the substantial wine list, those rotating themes make repeat visits meaningfully different while supporting the students' progression.
