Unknown Chapter Coffee Roasters brings the working roastery and the dining room together on Saint Asaph Street. Beans are roasted on site, coffee is brewed at the bar, and pastries and cakes come from the cafe's own kitchen rather than arriving as an afterthought. That combination makes the room useful in several ways: an early stop for espresso, a proper sit-down brunch, or a quick cabinet lunch. The central-city location feels polished and contemporary while keeping the craft of coffee plainly visible.
The coffee programme follows harvests rather than treating the bean list as fixed. Unknown Chapter buys traceable coffees, tests each origin and adjusts roasting to preserve the qualities of the individual farm instead of blending every lot into one house style. Its Brazilian house espresso, for example, comes from the Carmo de Minas region and uses naturally processed coffee selected at harvest, density sorted and dried on patios. Single-origin espresso, filter choices and decaf give regular visitors reasons to try a different cup.
Brunch starts with familiar cafe dishes, then gives them enough detail to feel considered. The classic breakfast combines free-range bacon, pork and apple sausage, poached eggs, mushrooms, tomato, rosti and sourdough, while a vegetarian version switches in halloumi and spinach. Eggs Benedict can be paired with bacon, mushrooms or hot-smoked Akaroa salmon. French toast arrives with blueberry compote, fruit, vanilla mascarpone and maple, and the lighter end of the menu includes house granola and oat-chia porridge.
Later choices move in a brighter, more savoury direction. A folded quesadilla packs chorizo, bacon, refried beans and cheddar beneath scrambled eggs, pineapple salsa, avocado and jalapeños. Avocado toast adds feta, pesto and dukkah, while the salad bowl layers halloumi, avocado, quinoa, organic red rice, almonds and pumpkin hummus. Fresh baking fills the gap between meals, making a slice, scone or pastry a natural partner for a second coffee even when there is no time for the full brunch menu.
