Three-tier brunch stand of fresh fruit, prosciutto and cheese, and pastries with sparkling wine and granola parfaits at St Johns Bar & Eatery

Long before it poured a pint, the Art Deco building at 5 Cable Street was in the business of saving lives. It went up in 1932 and 1933 as the first headquarters of the Wellington Free Ambulance, the service Mayor Charles Norwood started after witnessing a traffic accident on Lambton Quay, and architect William Turnbull answered Norwood’s brief for something distinctive, modern and functional. It was the first purpose built ambulance station in New Zealand and housed the service for 61 years. Once the ambulances moved to Thorndon, the building became a bar in 1994, and when a casino hotel plan threatened demolition, public opposition won it heritage protection. Plaster friezes, capitals carrying Masonic insignia, geometric floor tiles and period lampshades still decorate the rooms.

St Johns Bar & Eatery leans into that heritage and into its spot on the Wellington waterfront in Te Aro. Velvet booths, potted palms and period light fittings give the bar a lush atmosphere, while the eatery next door looks out towards the harbour. On a fine afternoon the crowd drifts outside to the sunny outdoor bar and the sheltered lawn, where bean bags face Whairepo Lagoon and dragon boats and rowing squads glide past. Dogs can join their owners in the outdoor areas, younger guests are welcome alongside a parent or guardian, and major sporting fixtures play across the venue. For private events, the team can set aside the lounge, the dining area, the enclosed courtyard or the whole bar, for anything from a wedding to a work celebration.

The head chef’s menu draws on locally sourced ingredients and is built for sharing, with plates arriving as they come out of the kitchen. Small plates run from the house fried chicken with pickles and confit garlic aioli to raw market fish with Thai basil, olive tapenade and crème fraîche, crispy squid with preserved lemon mayonnaise and furikake, and mushroom arancini with truffle aioli and burnt leek. Larger dishes include braised lamb shoulder pappardelle with taleggio and kale, coq au vin with pomme purée and red wine jus, and pan fried market fish in a mussel and leek broth. Steaks from the grill are New Zealand prime steer beef, given a minimum of 21 days of ageing, and seared cauliflower with labneh and gremolata or pumpkin risotto with whipped feta and sage and walnut butter suit vegetarians, with vegan versions available.

The bar pours international beers on tap alongside local craft from the likes of Panhead and Emerson’s, while the wines span Marlborough sauvignon blanc and Martinborough pinot noir, Ata Rangi’s Crimson among them, all the way to French Champagne. Signature cocktails nod to the setting: the Dragonboat mixes spiced rum with berry liqueur, pineapple, mango and orgeat, while the Harbour Blush brings together apricot, orange, lime and grenadine. The classics run through spritzes, margaritas, negronis and espresso martinis, and alcohol free drinks such as the butterfly pea and hibiscus Purple Pace mean nobody misses out. A weekly quiz night and live music keep the calendar full, and the venue marks occasions such as Melbourne Cup, Christmas Day and New Year’s Eve with celebrations on the waterfront.
