Golden tofu with vegetables and garnish at Le Saigon Wellington

Le Saigon Vietnamese Kitchen occupies the ground floor of The Change House, a heritage building that gives its Featherston Street dining room an immediate sense of place. French influence appears in the interior as well as in the story of the food, while the kitchen identifies most closely with Southern Vietnam. Its guiding idea is balance across sweet, sour, salty, bitter and spicy flavours, a useful thread through a menu that ranges from street-food staples to composed dinner plates.

The signature starters show that balance in compact form. Cha gio spring rolls offer crisp pastry and savoury filling, while the vividly dressed fish ceviche brings freshness, acidity and herbs to the table. Banh xeo, described here as the happy pancake, adds a crackling shell and the pleasure of assembling bites around it. These dishes reward sharing and make an expressive introduction before the soups, rice plates and noodles arrive.

More substantial choices cover several different traditions of Vietnamese everyday cooking. Pho and beef-brisket egg noodles provide warming bowls, whereas vermicelli salad layers grilled meat with herbs and lighter textures. Banh mi is filled with pâté, mayonnaise, pickles, cucumber and coriander. Char-grilled pork sirloin comes with rice and pickled vegetables; lemongrass chicken curry adds kumara and coconut gravy; and shaking beef arrives sizzling with onions, capsicum and egg.

The dining room is designed to accommodate more than one kind of visit. Booths offer privacy for small groups, high tables create a casual bar area, and the main room can shift from solo dining to larger bookings. Gluten-free, vegetarian and vegan choices widen the menu's usefulness, while private functions can be arranged for up to 70 people with a set menu. That flexibility makes Le Saigon as practical for a central-city lunch as it is for a long dinner or celebration.
