Wafu Bistro is a small evening restaurant in central Nelson where Japanese seafood preparation is the main event. The compact dining room lets guests watch fresh fish being handled with care, and the service is deliberately focused on people eating in rather than takeaway orders. Reservations are useful because the room and team are both small, while group bookings are kept intimate enough to preserve the pace of the kitchen.
Sashimi and nigiri show the clearest expression of the restaurant's approach. Tuna, king salmon and the day's white fish can be ordered as sashimi, while usu-zukuri presents thin slices of white fish with ponzu. Nigiri selections change with supply, and kaisen don gathers assorted sashimi over steamed rice for diners who want the freshness of the sushi counter in a more complete bowl.
The cooked side of the menu is equally considered. Miso soup, edamame, Japanese pickles and sesame seaweed salad make restrained openers, while chawan-mushi, agedashi tofu and panko calamari bring warmer textures. Tempura can feature tiger prawn, king salmon, white fish or seasonal vegetables, and the roll list moves from fresh vegetables and teriyaki chicken to spicy tuna, salmon, tempura prawn and BBQ eel.
Platters make the experience easy to share, combining sashimi and nigiri in sizes designed for one, two, three or four people. A selected drinks list accompanies the meal in place of BYO. The result is a focused Nelson dinner destination where careful knife work, a changing fish selection and a measured sequence of hot and cold dishes matter more than an oversized menu.
