Nudel is a small, family-run Willis Street eatery whose long service hours suit both an early meal and a late Te Aro stop. The kitchen offers pickup and delivery as well as food for diners visiting the compact city premises. Its menu is broader than the name alone suggests: noodles are a major thread, but handmade dumplings, filled buns, roast meats, Chinese mains, fried rice and warming soups all have their own sections.
Handmade dumplings are one of the best ways to understand the kitchen's range. Pork and chive, black pepper beef, vegetarian and mushroom pork fillings give diners four quite different choices within the same format. The smaller bites continue with pot stickers, fried wontons and a group of buns filled with barbecue pork, mushroom and pork, custard, red bean or black sesame. A table can keep the order savoury throughout or finish with one of the sweeter steamed fillings.
The Chinese-meal section brings stronger wok and braising flavours. Kung pao chicken and beef sit beside twice-cooked pork, mapo tofu and beef cooked with mushrooms or hot chilli broth. Roast pork, roast duck and barbecue pork can be served over steamed rice, while salt-and-pepper chicken or pork offers a crisper alternative. These dishes make it easy to order individually, although a shared spread creates more contrast between chilli, roast meat, tofu and stir-fried preparations.
Noodles and rice widen the choice beyond those Chinese mains. Mee goreng, Hokkien noodles, pad Thai, beef udon and Singapore rice sticks appear alongside several roast-meat noodle variations. Fried-rice options range from Yang Chow to roast duck and beef brisket, while the soup section covers wonton noodles, brisket, roast meats, seafood laksa and tom yum seafood. That breadth makes Nudel useful when one table wants dumplings and buns but another diner is looking for a full bowl or rice meal.
