Mughlai MerCury is a compact Te Aro restaurant focused on North Indian food, with dine-in, pickup and delivery all connected to its Willis Street kitchen. Its evening-led service makes it particularly useful when a curry or biryani is wanted later than a typical daytime cafe can provide. The format is direct and extensive rather than minimalist: diners can begin with tandoor-cooked starters, choose among several gravy styles and proteins, then build the meal with rice, breads, chutneys and cooling sides.

The entrée list gives the tandoor a prominent role. Chicken tikka and garlic chicken tikka are marinated in spiced yoghurt before roasting, while tandoori chicken uses an overnight marinade. Fish tikka adds lemon to the yoghurt, and minced lamb seekh kebab brings a different texture from the skewers. Vegetable samosas, pakoras and onion bhaji offer crisp meat-free starts, while tandoori prawns expand the selection for a group that wants to share several plates.

Curries can be matched with chicken, lamb, goat or fish across several preparations. Butter curry brings tomato, cashew and cream; korma takes a nutty, mild route; and tikka masala works from an onion-and-tomato gravy. Kadai adds crushed coriander, onion, chilli and capsicum, while Madras uses coconut cream and vindaloo turns towards chilli and vinegar. Saffron-scented biryani is available with chicken, lamb, goat or vegetables, and paneer tikka masala gives vegetarian diners a substantial centrepiece.

Bread and condiments make the menu especially adaptable. Plain, buttered and garlic naan sit beside flaky paratha, cheese kulcha, potato kulcha and a sweeter Peshawari naan filled with dried fruit. Raita, mint, tamarind and mango chutneys can cool, sharpen or sweeten each mouthful, and a bread basket helps a group compare several textures. Mango lassi continues the cooling theme, while gulab jamun provides a traditional syrupy finish after the stronger spice and smoke of the main meal.
