Signal Hill gives a modern bar and restaurant a genuinely old Devonport frame. Part of the house at 24 Victoria Road dates to around 1846 and is associated with William Oliver, an early North Shore settler. The restored building now serves locals and visitors rather than remaining a static heritage piece, with dining rooms, outdoor tables and a separate historic room for groups. Its position in the heart of the township makes it equally useful for an unplanned lunch, drinks or a more leisurely dinner.
The smaller dishes show a kitchen comfortable moving between fresh seafood, pub favourites and more playful combinations. Raw fish is sharpened with chilli, coconut, coriander and garlic; chicken wings come in buffalo or maple-soy styles; and the house-cured charcuterie is joined by gooseberry and walnuts. Mushroom doughnuts with whipped feta, wagyu beef nuggets with aged cheddar, and lamb rissoles with bread sauce give a shared table several distinct textures instead of a run of near-identical fried snacks.
Main courses are broad but carefully composed. Pan-seared market fish is paired with mushrooms, fennel-and-apple salad and beurre blanc, while braised lamb shank comes with mash, mirepoix and merlot jus. An 18-hour wagyu short rib adds mushroom and chorizo ragù, and pan-seared duck combines breast and confit leg with white beans. There is also fish linguine, pumpkin-and-leek tortellini, chicken escalope, a triple-patty beef burger and beer-battered market fish for diners wanting something more familiar and direct.
The format remains flexible around that food. Reservations cover indoor and outdoor areas, a few tables are held for walk-ins, and the William Oliver Room can accommodate a larger gathering in a space connected to the building's history. Signal Hill also maintains an extensive drinks list, so it works as a bar without treating food as incidental. Dessert stays concise: affogato can be spiked with a liqueur, while chocolate brownie, a trio of ice creams and a blueberry-and-apple crumble provide fuller finishes.
