The Thistle Inn is one of the rare Wellington pubs where the building’s story is inseparable from the meal. A tavern first opened on Mulgrave Street in 1840, and the inn rebuilt there in 1866 remains a working all-day gastropub rather than a preserved display. Its Thorndon location once faced the harbour before reclamation changed the shoreline. Today, guests can settle in for food and local drinks amid that history, or arrange a short tour of the building before returning to the table.
The food direction is approachable gastropub cooking with a clear New Zealand accent. Paua croquettes and smoked kahawai bring local ingredients into snackable forms, while fish and chips supplies the kind of enduring pub main that suits the room. The kitchen’s stated aim is not to make these dishes difficult or overly formal, but to add distinctive flavour elements to familiar ideas. That balance makes sense here: the surroundings carry plenty of heritage, leaving the plate free to be generous, readable and contemporary.
A current burger shows how the menu can depart from the expected without losing its pub character. A beef-and-pork patty is topped with Cajun prawns, chilli-pickled beetroot, American cheddar and New Orleans remoulade, then served with Cajun-seasoned fries. The vegetarian version exchanges the meat and prawns for a vegetable patty and Cajun mushrooms while retaining the beetroot, cheese and remoulade. Both build richness, spice, acidity and crunch into a format that remains easy to understand.
The Thistle also works as more than a place for an individual lunch or dinner. Local wine, beer and spirits support a drink-led visit, while private functions, weddings, milestone birthdays and corporate gatherings can use the venue’s event spaces. Upstairs meeting rooms add a business function, and the INN Out catering service takes sandwiches, salads, pies, baking and other working-day food beyond the pub itself. This range keeps the historic building active in contemporary Wellington life, from a casual pint to a structured event.
